General Sung's Pan-Fried Crepe

This dish is special to me. Growing up, my mom is an excellent cook. When I say that, I don't mean just a good cook, I really meant a chef-level cook. She's got tons of signature dishes that she's passed down to us. But this dish, represents love between a Father and his two daughters. My dad was a fighter pilot for his whole life. He was retired as a General. That's why we call this dish "General Sung's Pan-Fried Crepe". For our entire childhood, he stays in the air force and only got to come home twice a month, and each visit only can last a couple of days. Whenever he's home, he will always make this dish as breakfast and serve it to us in bed! It's a tasted of happiness, a smell of Daddy's home! My dad grew up in a very poor family with 5 siblings. They had no money for any good, quality ingredients for food. The only things that they have access all the time are eggs, flour and sugar. We've been trying to make this dish, but can never make it as good as his. He said, it's because we've never know how poverty tastes like, that's why we don't appreciate these simple ingredients as they do. I don't know if that's really why, but I finally convinced him to make this dish on my FB Live Cooking Series, so we can all learn together!

Ingredients: Serving 3-4

Egg x 1

AP Flour x 1 cup

Sugar x ½ cup

Water x 1 ⅓ cup

Oil x ½ tbsp (for each crepe)

Recipe :

1. Mix egg, flour, sugar and water together. Mix well and set aside.

2. Add ½ tbsp oil in a non-stick pan, and heat it up with high heat.

3. Once the oil is hot, turn the heat down to medium. Pour in ½ cup of the batter (step 1), use a spatula, gently spread the batter out to make a thin and round crepe.

4. Wait for the batter on the top to mostly dry, then flip it over and cook the other side.

5. Cook till both sides are mostly golden brown.

6. Enjoy!!
